Hog Casings
Hog casings are generally used for coarse emulsion products such as:
• Fresh sausage
• Cooked sausage • Boerewors • Chorizos • Pepperoni • Bratwurst • Country-style sausages • Italian sausage • Large frankfurters • Russian sausages
The most commonly used hog casing comes from the small intestine, called the ‘runner’.
The runner section is coiled like a spring for most of its length, which is why sausages in a
natural casing is always curled.
