Sodium citrate has a surprisingly large number of different uses given its relatively simple chemistry. In food production, it is used as an emulsifier, preservative, and buffer.

Description

Usage/Recommendation: For a 20% pump above green weight dissolve 1kg in 10L water After dissolving cure add salt 400g to 700g (to your preference), sugar can be added if desired, dissolve before pumping. Pump meat to 20% above initial weight.
