Manual Schnitzel Master Tenderiser and Flattener
The Schnitzel Master tenderizes meat using a process called “Mastering®”. This patented system ensures meat fibres are neither pressed, steaked, nor battered in the process, but only carefully stretched in a longitudinal and lateral direction so the customer experiences a completely different taste and the fresh meat character is preserved. It increases meat surface areas by up to 50%, produces a higher-weight product, maintains a benchmark pH, extends the shelf life of up to eight days, and contributes to tastier juicier meat when served.
Two manual machine models are available, PROFI is distinguished by its 240mm working roller. MAXI is distinguished by its 320mm working roller.

It increases meat surface areas by up to 50%, produces a higher-weight product, maintains a benchmark pH, extends the shelf life of up to eight days, and contributes to a tastier meat juicer meat when served. The SMK series is a fully automated compact conveyor flattener machine designed for production within a confined space. The cut and portioned meat is carried via a transportation belt to the Mastering® processor which consists of two pairs of toothed rollers and then finally smoothed by a second pair of rollers. The desired final meat thickness is reached by employing separate adjustable levers.
