Specialized Combo patent for fermenting, drying, seasoning, preserving and dry aging, flavouring. All int./external parts in contact with food made of stainless steel AISI 304. Dual ClimaTouch®, management and control systems, 6” colour touch-screen interface for automatic control of fermenting, drying, seasoning, salting, dry aging, smoking-flavouring It can be equipped with a probe (optional) for pH measurement. Internal memory available in 352kb RAM for approx. 100 recipes, included are 30+5 preset recipes. Datatrace for HACCP monitoring with colour display with output serial port for PC and printers. Automatic internal lighting, height adjustable legs, dehumidifier, optional air-recycle, heated frame, hot gas defrost, and industrial refrigeration unit (NO MONO-BLOCK). 4+5 stainless steel AISI 304 guides set, 20 stainless steel AISI 304 salami hanging rods, 5 stainless steel AISI 316 racks. 2 stainless steel AISI 304 (NON ALUMINIUM) door with large double glazed glass. Equipped with Fumotic system for humidification and flavouring with dual tank (water and aroma) and level alarm system.

Clima Touch®

ClimaTouch ® is designed to be equipped with a probe for pH measurement and control, useful for quality test of traditional sausages. 
ClimaTouch ® follows you everywhere in the world, communicates with your phone or your computer microwebgate GSM / GPRS network. 
ClimaTouch ® is now considered the control and management system more interactive, intuitive and educational for the treatment of traditional Italian salami.

Fumotic®

Fumotic®, will enrich the capacities of use of Stagionello®, allowing both functions:   – Smoking and Aromatization. This phase of working uses natural liquid smoke sprayed into the room of Stagionello® with low temperature, respecting the genuineness of the products.   -Humidification Fumotic® is the first patent that really controls the humidity into the cabinet, besides not requires water connection because it uses water contained in the boiler placed in a special slot on the top of the Stagionello®, it manages well the humidity into the cabinet regardless of the minimum load required on the models without this optional.
