Salting – Drying – Fermentation – Seasoning

DRYING CHEESE
ClimaTouch allows fine tuning the parameters of temperature, humidity, air velocity, and stage time, it is possible to obtain the desired degree of consistency and determine the thickness of the rind.

SEASONING CHEESE
Our unique temperature and humidity regulation system, you have more control over microbiological and biochemical taking place during ripening. The ideal conditions for curd maturation are met, until the desired texture, body, and flavour are developed. The system is built using a bi-flow turbo evaporator, similarly used for salami production.

Clima Touch®

ClimaTouch ® is a revolutionary management system of climatic recipes with pH control(optional). ClimaTouch ® has a highly developed software dedicated entirely to traditional food processing, very intuitive and easy to use. Fumotic®

Fumotic®, will enrich the capacities of use of iAFFIACHEESE®, allowing both functions:   – Smoking and Aromatization. This phase of working uses natural liquid smoke sprayed into the room of iAFFIACHEESE® with low temperature, respecting the genuineness of the products.   -Humidification Fumotic® is the first patent that really controls the humidity into the cabinet, besides not requires water connection because it uses water contained in the boiler placed in a special slot on the top of the iAFFIACHEESE®,
