Bactoferm T-SPX starter culture, is a meat culture for traditional production of fermented meat products. The culture gives a mild acidification with good flavour and colour development

The high concentration of Pediococcus pentosaceus gives a controlled and moderate pH-drop. The acidification gives a mild lactic acid taste. The used Staphylococcus xylosus gives good colour formation and stability. Furthermore the Staphylococcus xylosus gives a very round and mild flavour which is very typical for South European salami types such as Milano.
